If it's just a basic mow, I figure if I get burned once, then oh well. I don't do another mow until I get payment from the last one. Getting new clients to replace deadbeats is working for me. Chasing deadbeats who dodge me never paid off in time. If I'm doing a bunch of stuff for them that'll add up (bush trim, dethatch, gutter clean, etc.) to a big bill, and I haven't established rapport yet, I split it up and get payment for each segment, and use the same policy.
